Why is yeast added to bread dough and dough covered with a cloth and set aside before bake?

yeast is a living thing it eats the simple sugars in the flour and the by product of that is alcohol and co2 it also multiplys every 20 min you let it rest so that the dough can mature in flavor its covered to stop skinning and to help keep it warm
